Fried cod

The cod fritters are very small gourmet appetizers that will delight the whole family. They can also be enjoyed as an appetizer with a green salad. To be consumed hot or cold, cod fritters are very simple to prepare.

Ingredients for 4 people

  • Cod – 300 g
  • Flour – 5 tablespoons
  • Eggs – 2
  • Sparkling water
  • Parsley
  • Extra virgin olive oil – 1 tablespoon
  • Oil for frying

Preparing cod fritters

Cut the cod into pieces and let it be desalinated for 24 to 48 hours. To do this, place it in a cold water container, you will change regularly. Once desalted, cut the cod into small cubes about 2 cm.

For the dough: In a bowl, mix 6 tablespoons very cold sparkling water, flour, egg yolks, a tablespoon of olive oil and a pinch of salt, using a whisk . You would get a dense and creamy. Let stand in refrigerator for 30 minutes.

Meanwhile, up the whites and chop the parsley. After 30 minutes passed, add the whites into batter using a spatula, stirring gently from bottom to top. Finally, add the parsley. The yeast dough is ready. It should be neither too compact nor too liquid.

Put the frying oil to heat, dip one by one the small cubes of cod in batter and fry them. When they are golden brown, drain the cod fritters and place them in a dish on paper towels. It’s ready!
