In Calabria, cattle farming are a widespread activity, due to the abundance of land suitable for grazing. Therefore, the production of meat, especially beef, is thriving. The meatballs in tomato sauce tribute to this tradition. This is a typical dish of peasant food, made with ingredients “poor”, but also natural and rich in taste. Very tasty, meatballs in tomato sauce are a full plate of meat, but they can also accompany pasta.
Ingredients for 4 people
- Beef – chopped 500 gr
- Tomato sauce – 1 l
- White bread – sliced 100g
- Pecorino Romain – grated 50 g
- Parmesan cheese – grated 50 g
- Eggs – 3
- Onion – ½
- Garlic – 3 cloves
- Basil – 5 sheets
- Extra virgin olive oil – 5 tablespoons
- Parsley – 2 tablespoons
- Nutmeg – grated
- Black pepper
Preparation meatballs in tomato sauce
Dice the bread and mix it. Place ground beef in a bowl and add the breadcrumbs, Parmesan and grated pecorino, parsley, eggs, salt, pepper and nutmeg. Knead the ingredients by hand, then let rest for an hour in the fridge.
To prepare the tomato sauce, heat the olive oil in a pan and add the garlic and chopped onion and cook 15 minutes. When the onion is transparent, add the tomato sauce and let simmer.
To make the meatballs, divide the meat mixture into pieces of about 10 g. Each piece conformed to the small sphere hand. When the tomato end, dip the meatballs and cook for at least 40 minutes on low heat until the sauce begins to thicken. Let simmer for 20 minutes and 5 minutes before end of cooking add the basil leaves. Once cooked, remove from heat and serve hot.
If you wish, you can flour the meatballs and fry in olive oil, then add the tomato sauce. To give more flavor to your balls, you can mix the beef with chopped pork.
