Spaghetti fresh tuna and cherry tomatoes is a very fresh flat smelling the sea, thanks to the fresh tuna, a fish that goes perfectly with pasta. There is also a Sicilian version very well known in this recipe, which takes the name of all’eoliana pasta with a tomato sauce, garlic, capers and olives.
Ingredients for 4 people
- Spaghetti – 360 g
- Fresh tuna – 1 fillet 200g
- Cherry tomatoes – twenty
- Garlic – 1 clove
- Extra virgin olive oil
Preparing spaghetti fresh tuna and cherry tomatoes
First, cut into cubes tuna fillet. Then, in a pan, fry the crushed garlic in olive oil; as soon as the garlic begins to blondir, add the cherry tomatoes. Salt, pepper and cook over high heat for a few minutes.
When the cherry tomatoes begin to open, add the pieces of tuna and cook evenly for a few minutes, turning regularly. Adjust salt and pepper.
Meanwhile, cook the spaghetti in plenty of boiling salted water. Then, drain and season immediately with the hot sauce. Serve with chopped fresh parsley.
Fresh tuna should not be overcooked, but just colorful, otherwise it becomes hard and loses its flavor. Instead of parsley, you can sprinkle the plate with chopped fresh mint.
